Since I’m a vegetarian most of these recipes I passed by, however I did find an interesting recipe for miso-cured tofu that I think could be a good cheese substitute, phb it takes two years yes years to fully cure so I have yet to see how it will turn out.

The book itself is gorgeous, with great photos that recreate the ambiance and mood in the various “favorites” of coobkook author, this is much more than a cookbook. I think I need to head out for some Izakaya this evening!! I love the tangy te sauce drizzled on seared fish and meat. The tiny little sort of dark and dingy place, wood paneling on the walls, maybe a smattering of photos, with only 6 or seven little seats.

Kinda a major typo Similarly, the author writes a few pages on each izakaya, but offers relatively little overview and no real conclusions drawn from this exploration. Reminds me of a place I used to frequent in Hikone, which I imagine qualifies as Izakaya, though I didn’t know that word at the time.
